Fishy in a blanket

Remember when you were a kid and loved eating pigs in a blanket? Now that we are all grown up, I think we should indulge ourselves in the finer flavors in life. I'm talking about smoked cod in a blanket! Plus, with Kodiak Island Smokehouse smoked cod pieces, you know exactly what you are getting, delicious, fresh, wild caught Alaskan smoked cod. With the piggies...well maybe the mystery meat was part of the fun when we were younger.




Ingredients-

-One can of pre-made Puff Pastry. Pizza dough also makes for a nice blanket.

-Kodiak Island Smokehouse Smoked Cod Pieces

-Green Onion

-Chipotle mayo


Step one- Take smoked cod pieces out of package. Eat one because you just cant help yourself.

Step two- wrap your little fishies in their blankets and lay them on greased parchment paper.

Step three- (optional) Brush your sleepy fishies with an egg wash before you put them to bed in the oven.

Step four- follow heating instructions from puff pastry packaging.

Once you take your smoked fishies in a blanket out of the oven, let them cool and serve with a sauce of your choice. We made a spicy, savory chipotle mayo dip. See below for recipe.


Ingredients-

-1 cup mayonnaise

-2 tablespoons finely chopped chives

-2 minced garlic cloves

-2 teaspoons fresh lime juice

-1 teaspoon chipotle chile powder or chipotle hot sauce

-Salt and pepper


Whisk mayonnaise with chives, garlic, lime juice, and chipotle chili powder or chipotle hot sauce to taste. Season with salt and pepper; chill until ready to serve.
