Imagine being a guest at a party where they are serving a caramelized onion, smoked salmon dip; the aroma of the caramelized onions still lingering in the air. Hypnotized by the onion aura filling the room, you walk over (more like float over) to the appetizer table and notice the dip is still warm, and there are a surplus of chips that is yours for the splurging.

Admit it, it doesn't matter what you use to eat that dip. It would be rather odd to use a spoon so, to appease social norms, you pick the chips as the appropriate vessel.

You bring the chip to your mouth, and suddenly the room goes dark.

No, you did not die and go to heaven, your eyes are just rolling in the back of your head as you experience the harmony of flavors dancing in your mouth!

"What issssss that flavor!?" you wonder.

I will tell you. That smokey flavor is coming from authentic, wild caught Alaskan smoked salmon straight from Kodiak Island Smokehouse. I bet you noticed the Gouda complementing the deep smoked flavors, then, an ever so slight hit of heat from the pepper. Truly, an amazing dish no matter how you serve it.

 

Ingredients-

  • 1 small-med sweet onion (I like walla- walla's caramelized)

  • 3 T butter

  • 8 oz or 2 cups shredded Gouda cheese

  • 8 oz softened cream cheese

  • 3/4 cup of mayonnaise

  • 1 t cayenne pepper

  • 2 T minced chives or green onion tops

  • 1 t minced garlic

  • 6-8 oz of Kodiak Island Smokehouse smoked salmon

Instructions-

Preheat your oven to 350 degrees

Make the caramelized onions. Place a small fry pan on very low heat on the stove and add the butter. I elevate my pan with a lift to get it even lower. The slower you cook the onions the sweeter they will be. Now cut and peel the onion and cut onion haves into very thin slices.

Add the onion slices to the pan and sprinkle with salt. Cook in the fry pan of very low heat. I raise the pan off the burner to reduce the heat even more. Slow cooking onions makes them sweeter. Cook this low and slow till its the color of caramel or peanut butter, when they are done remove from the heat.

Next, prepare your smoked salmon. Be sure to remove the skin, bones and scrape off any gray or silver meat on the bottom. This is very fishy in flavor and best discarded. Dice the salmon and add to mixture next.

Meanwhile, in a small bowl add your softened cream cheese and mash it with a fork. To that add the mayonnaise, mix well. To this mix, add your cheese Kodiak Island Smoked Salmon and the remaining ingredients. Mix well then add in the caramelized onions and stir again.

I put mine in a cast iron pan but you can use a loaf pan or any other oven safe dish.

Bake for 25-30 minutes

Serve with tortilla chips, bread toasts, crackers or even use this for a grilled cheese sandwich!!
