Spicy Smoked Fish and Goat Cheese Stuffed Mushrooms

Stuffed mushrooms make for a elegant and creative appetizer, especially when you add smoked fish to the equation. The experience becomes that out of a story book, when the mouthwatering, savory flavors blend together in your mouth, making a beautiful partnership between the soft goat cheese and elaborate spices.


Ingredients-

-12-15 mushrooms

-1/2 cup goat cheese

-2tbs mayonnaise

-1/4 cup flaked Kodiak Island Smokehouse smoked fish

-1 tsp lemon zest

-1 tsp red pepper flakes

-1 tsp fresh dill

-1 tbs green onion


Instructions-




Preheat oven to 350. Remove stems from mushrooms and place on an ungreased baking pan lined with parchment paper. Drizzle olive oil over the mushrooms and bake for 24-30 minutes.

While mushrooms are in the oven, combine all other ingredients together in a large bowl. Remove mushrooms from oven and fill as shown in the picture.



Place filled mushrooms back on the baking pan and bake for another 6-8 minutes.

Mushroom fillings should have golden brow tops. Garnish plate with olive oil and lemon juice. Enjoy!
