Fresh Smoked Salmon Garden Salad

Cool down this summer with this fresh catch! Delicious flavors of wild caught, Alaskan smoked salmon , zesty lemon and romaine come together to excite your taste buds with this delicious smoked salmon salad recipe.


Ingredients-

1 can 15oz of white beans (cannellini or other)

​1/4 pound of Kodiak Island Smokehouse smoked red salmon, flaked (click here to purchase)

2 cups of spring salad mix or romaine lettuce mix

1/2 of a small red onion, thinly sliced

1/4 cup of fresh Italian parsley, rough chopped

1/4 cup of red wine vinegar

1/2 tsp dried oregano, crushed

1/4 tsp salt

1/4 tsp pepper

3 Tbsp Olive Oil

1/2 of a lemon

1 Tbsp capers

1 baguette or other crusty bread, toasted (optional for keto and gluten free)


In a large bowl combine the first five ingredients. Then for the dressing using a emulsion mixer or whisk in a shaker cup or small bowl. Add the red wine vinegar, oregano, salt and pepper to shaker cup. While blending slowly drizzle the olive oil so it will blend with the vinegar to form a dressing.  Pour dressing over salad and toss to coat then squeeze the juice from lemon over salad.

Serve with toasted slices of crusty bread
